Ils ressemblent à de petites oranges miniatures. Ils peuvent accompagner des viandes mais confits, ils se transforment en mignardises originales pour un repas de fêtes. Vous pouvez également les présenter avec votre plateau de fromages.
La première étape consiste à préparer un sirop.
Pour 500g de kumquats, portez à ébullition 500g de sucre avec 500ml d'eau pendant 5 minutes. Laissez refroidir et réservez.
Piquez chaque kumquat avec une aiguille une dizaine de fois. Mettez les dans un faitout et couvrez les d'eau froide et portez les à ébullition. Renouvelez 3 fois de suite l'opération en les égouttant à chaque fois et en remettant de l'eau froide. L'objectif est de supprimer l'amertume de ces agrumes.
Après cette opération, plongez les kumquats dans le sirop refroidi et portez les à ébullition, puis laissez les refroidir. Cette opération doit être effectuée 6 fois.
Après le dernier refroidissement, égouttez les kumquats et placez les fruits confits dans un bocal et conservez le au frais.
