Les ingrédients pour 6 tartelettes
Une pâte brisée3 oeufs
10cl de crème fraiche épaisse
20g de beurre
500g de poireaux
200g de ricotta
1 pincée de noix de muscade, sel, poivre
La recette
Enlevez les premières feuilles des poireaux, lavez les et découpez les en petits tronçons. Faites les cuire à la vapeur (100% taux d'humidité et 100° au four vapeur) pendant 8 minutes.
Faites fondre le beurre dans une poêle, faites y revenir les poireaux pendant 5 minutes. Faites les refroidir et essorez les puis hachez les le plus finement possible.
Préchauffez le four à 180° et beurrez légèrement les moules à tarte.
Déroulez la pâte brisée et découpez des cercles de pâtes. Etalez la pâte dans chaque moule à tartelette. Piquez là et enfournez pour 5 minutes.
Pendant ce temps, préparez la garniture.
Battez les oeufs, le fromage et la crème fraiche dans un saladier. Ajoutez y les poireaux, salez, poivrez et ajoutez une pincée de noix de muscade et mélangez bien.
Répartissez la préparation dans les moules et enfournez pour 30 minutes.
Vous pouvez remplacer les poireaux par des épinards.
