Haricots coco au lard et crème de cocos

Les haricots coco se trouvent frais à écosser ou sec. Sec, il faut les faire tremper 24 heures avant de les cuisiner. Ils s'accommodent très bien avec le porc, entiers ou en soupe.

Les ingrédients
340g de haricots coco en grain
1 petit oignon
1 bouquet garni
200g de poitrine fumé
Poivre

La recette
Epluchez et coupez l'oignon en 2. Coupez la poitrine fumée en morceaux.
Mettez les haricots, les lardons, l'oignon, le bouquet garni et un peu de poivre dans un faitout. Recouvrez d'eau et faites cuire 30 minutes à petits bouillons. Servez aussitôt.



Avec les restes, faites une crème de coco.
Enlevez les lardons et mixez les haricots coco avec 15cl de crème liquide.
