18 petites clémentines
2 cuillères à soupe de miel
3 cuillères à soupe d'eau
90g de sucre en poudre
1 brin de thym
Recette
Rincez 2 clémentines, essuyez les. Râpez finement leurs zestes. Réservez.
Pressez 6 clémentines (dont les 2 "dézestées") et versez le jus dans une casserole. Ajoutez les zestes et 30g de sucre. Faites bouillir et réduire 5 minutes.
Hors du feu, ajoutez le miel et le thym. Couvrez et laissez refroidir la nage 2 heures au réfrigérateur.
Epluchez délicatement les 12 clémentines restantes. Gardez les entières.Mettez 60g de sucre avec 3 cuillères à soupe d’eau dans une sauteuse. Portez à ébullition en remuant et laissez frémir 2 mn.
Ajoutez les 12 clémentines Faites les rouler 2 à 3 mn dans le sirop pour qu’elles soient recouvertes d’une pellicule brillante.
Réservez les dans un plat et laissez refroidir à température ambiante.
Au dernier moment, versez la nage bien froide autour des clémentines, sans les mouiller. Servez rapidement.
